The best cookie has Black Beans in it!!

What?! I know what you are thinking... this girl is crazy! Black beans in cookies... no way! Trust me on this one though - they are amazing and once you have one, you will want another one (or maybe 2 or 3!)!
Before we get to the recipe I wanted to explain why I would put beans in a cookie! On our farm we grow black beans and they are my favorite crop to grow! I am always trying to find more ways to eat what we produce and what better thing to eat then a cookie! If you do use this recipe to make some cookies, I would encourage you to find locally grown black beans and if you can't find any, you can always reach out to me!
Enough chit chat lets get to the recipe!
Ingredients:
15 oz can Black beans (rinsed & drained)
4 TBSP unsalted butter
1 egg
2 TSP vanilla extract
1/2 cup sugar
1/2 TSP baking soda
1/2 TSP kosher salt
2 oz unsweetened chocolate (melted & briefly cooled)
1/4 cup + 2 TBSP unsweetened cocoa powder
4 oz semi sweet chocolate chips
Directions:
Preheat oven to 375F
In a food processor mix black beans, butter, and egg until mostly smooth
Add vanilla, sugar, baking soda, salt, and melted chocolate & mix until smooth
Add cocoa powder & mix until mixture is well combined
Add most of chocolate chips and mix by hand until evenly distributed
Scoop cookie dough on baking sheet lined with parchment paper, top with chocolate chips
Place baking sheet in fridge for 10 minutes (or until cookies are firm)
Place in oven for 18 minutes (or until cookies are cracked on top)
Let cool & ENJOY!!
